Gluten-Free Zucchini Spice Bread

There is nothing worse than bland zucchini bread.  It’s like having a mouthful of weird veggies that have been tossed in flour.

Ain’t nobody got time for that.

Since my obsession with squash hasn’t diminished, I find myself spiralizing it, putting it in soup, stuffing with with ground meat, making super yummy fritters, and finally, I had a V8 moment and thought, why haven’t I made bread yet?!

My mom is going gluten free according to her doctor’s suggestion and she seems to be feeling more energetic.  She says it’s still hard to find baked goods that are both gluten-free and yummy (and don’t cost you an entire paycheck) so the experimenting continues in my kitchen.  So far, I’m really digging the spelt flour.  I love the nuttiness of it and it give me a predictable result.  I just picked up a different bag of AP Gluten-Free flour and think it may do better with cakes and cookies.

Gluten-Free Zucchini Spice Bread

  • 1 1/2 cups organic spelt flour
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp nutmeg
  • 1/2 unsweetened applesauce
  • 2 eggs
  • 2 tsp vanilla extract
  • 3/4 cup agave or maple syrup
  • 1 1/4 cup grated zucchini (drained of water)
  • Optional add ins (i.e. walnuts, raisins, chocolate chips)
  1. Preheat oven to 345.  Grease and flour an 8 x 4 loaf pan and line with parchment (I like to be prepared)
  2. Mix dry ingredients in a bowl (first six ingredients).
  3. Mix wet ingredients (next five ingredients) in a separate bowl.
  4. Add dry ingredients to wet and stir until well combined.
  5. Bake for 50 – 60 minutes, or until internal temperature of bread is 200 degrees.  The break should be firm to the touch and spring back when pressed.
  6. Allow bread to cool in pan for 10 minutes.
  7. Remove from pan and cool completely on rack before slicing.
